I always have a pack of sweet corn kernels in my freezer. I add sweet corn to every possible dish due to its numerous health benefits.
One dish that can be easily made out of sweet corn is this Indian style salad. There are 2 reasons for me to share this salad recipe with you all. One reason is sweet corn being loved by majority of the people. Another reason is, the salad I make is loved by my 27 months old daughter. Yes you heard it right!!! She loves it so much that I end up making this salad almost every day to see that cute smile on her face and hear one word “choopa(super)” :-). I dedicate this post to my cute little monster!!!
This is my version of sweet corn salad with Indian touch. This salad looks colorful and tempting!!! I make this as a side dish for lunch. Diet conscious people can have a bowl of this for lunch. This makes a good guilt free snack as well.
Try this salad and I am sure everyone in your house will fall in love with this healthy and yummy salad including kids!!

Sihi mekkejola/ Sweet corn – 2 cups(frozen)
Irulli/ Pyaaj/ Onion – 1 medium-sized (1/4 cup when finely chopped)
Tomato hannu/ Tamaatar/ Tomatoes – 1 medium-sized ( Approximately ½ cup when chopped)
Hasi menasinakaayi/ Hari mirch/ Green chillies – ½
Kotthambari soppu / Dhaniya ke patte/ Coriander leaves – ¼ cup loosely packed when chopped
Pudina soppu/ Pudina ke patte/ Mint leaves – 10
Kappu uppu/ Kala namak/ Black salt – 1 small pinch
Chat masala – 2 pinches
Uppu/ Namak/ Salt – As required
Step 1: Pressure cook the frozen sweet corn kernels for 3 whistles without adding water.
Step 2: Once the corn kernels are cooked, cool it completely.
Step 3: When the corn kernels are getting cooled, finely chop the required onion and keep it aside. Remove the seeds of tomato, finely chop it and keep it aside.
Step 4: Wash the required coriander leaves, mint leaves and green chilli and grind it into coarse paste without adding water and keep it aside.
Making Indian style sweet corn salad:
Step 1: Take finely chopped onions, tomatoes, salt, black salt, chat masala and ground mint coriander leaves paste in a mixing bowl and mix everything well with your hand.
Step 2: Now add cooked and cooled corn kernels to the above mixture and mix well. Salad is ready to serve!!!
*Fresh sweet corn can also be used. It tastes even better than frozen corn.
* More green chillies can be used according to your taste.
* Lemon juice can be used for salad dressing, if you want to make the salad more tangy. I don’t add because for us the tangy taste of tomato is sufficient.
*I use only coriander leaves and green chillies for the paste when I don’t have mint leaves at home. The salad tastes equally good without mint leaves.
*Finely chopped cucumber (about ¼ cup) can also be added to salad.
