“Ganpathi Bappa Morya”. Happy advanced Ganesh Chathurthi everyone!!! Ganpathi bappa is my favourite god since childhood. I make sure to prepare all his favourite dishes like modaka, kadbu, undluka and many more during Ganesh Chathurthi. Undluka is an Udupi cuisine prepared during Ganesh chathurthi.
There are two versions of undlukas, steamed and fried. The recipe I am sharing is of fried version. Marble sized rice flour balls are deep-fried in oil and are mixed with freshly grated coconut jaggery mixture. Maida is my addition to this recipe. Adding maida binds the rice balls well preventing it from breaking and also gives a chewy taste to the balls.These taste great when hot or after sometime.
These undlukas form the best naivedhyam and is loved by everyone including kids!!!!!

Akki hittu/ Chawal ki atta/ Rice flour – ½ cup
Neeru/ Paani/ Water – 1 cup
Uppu/ Namak/ Salt – 1 pinch
Thuppa/ Ghee/ Clarified butter – 1 teaspoon
Maida hittu/ Maida/ All purpose flour – 2 tablespoons
Enne/ Thel/ Oil – For deep-frying
Thenginkaayi thuri/ Kisa hua naariyal/ Grated coconut – ½ cup
Bella/ Gud/ Jaggery – 1/3 cup
Elakki pudi/ Elaichi powder/ Cardamom powder – ¼ teaspoon
- Grate and keep the required amount of coconut.
- Grate and keep the required amount of Jaggery.
- Crush and keep the required amount of cardamom.

Step 1: Take 1 cup water in a pan, boil it. When the water starts boiling, reduce the flame and add salt, ghee and rice flour.
Step 2: Stir and mix the water and flour mixture till all the rice flour is mixed with water and a dough is formed.
Step 3: Now transfer all the dough into a mixing bowl; add 2 tablespoons of all-purpose flour to the dough. Knead the dough well.
Step 4: Grease your palms with oil or ghee and start making marble sized balls with the dough. Make balls with the whole dough.
Step 5: Heat the oil in a frying pan, deep fry the balls in medium flame till golden brown. Fry all the balls and keep aside.
Step 6: Now take a mixing bowl, add jaggery, grated coconut and cardamom powder. Mix well with your hand.
Step 7: Now add fried undluka balls to the jaggery coconut mixture and mix well with your hand. Undlukas are ready to serve!!!!
*The balls should be smooth in appearance; they should not have any cracks.
*Balls made can be steamed for 12 to 15 minutes and mixed with jaggery coconut mixture. This is the steamed version.
*Maida can be replaced with chiroti rava.
